I tried buckwheat for the first time, here is what I have to say:

What it is:
Buckwheat does not contain gluten! Which flour that is delicious in the form of pancakes, waffles, and is gluten free is rare to find. Not only is it gluten free but it is also high in magnesium and fiber as well as some other vitamins and has a nutty distinctive flavor it is hearty as well.
Recommendations:
I used the buckwheat as the primary ingredient to make pancakes and found it delicious but upon my research I found that it can be used in many ways:
Added to baked goods to give more heartiness, vitamins, and nutty flavor ( I personally would not use this as the primary flour in per say a muffin but try a 1 part buckwheat to 3 part flour recommended in the recipe to start with or possibly 1 to 4 ratio and experiment with baked goods. This would make muffins a hearier breakfast option to be more filling and nutrient rich.).
cook and served similar to rice
used for soups
pancakes (as I used) or for crepes, (my guess would be that the crepes would be great either savory or sweet with how much of a nutty flavor the buckwheat is).
as a poultry stuffing
etc…
Personal experience:
I made buckwheat pancakes and I loved them. They just required a few ingredients, yet were full of flavor! I can see how they could be used both sweet and savory. I topped my buckwheat pancakes with maple syrup, strawberries, and vegan whipped cream. I used country crock plant based whipped cream which I would link but amazon does not provide so I have linked a comparable alternative along with a recommended buckwheat flour option. Once I started making these pancakes per recipe instructions and tried them they were good, but did not blow me away. What I ended up doing to take these pancakes up another level was adding fresh blueberries to the mix. If I were to make them again I would continue adding fresh fruit and maybe even top them with a fresh fruit sauce. The buckwheat in itself is such a distinctive flavor and delightful to the tastebuds.
Serving someone Gluten Free?
Did you read this blog and now know where to start with a gluten free breakfast pancake? Just remember to check labeling when buying ingredients. Just because you might think something is gluten free, does not mean the company who processed it made it that way.
