Pumpkin Baked Oatmeal

Main Ingredients

I witnessed a classmate of mine make this recipe and upon trying it I knew it needed to be a part of my regular autumn meals. The flavors were packed in but the simplicity of it being one bowl with little mess also drew me towards this recipe. This recipe is the perfect combination of hot and cold with the hot baked oatmeal and the cold topping of cream making a delightful meal.

Main Ingredients

  • Pumpkin

  • Rolled oats

  • Milk (I used unsweetened almond milk)

  • Egg

  • Pecans


Substitutions

  • Egg replacer of Baking powder and baking soda

  • Almond milk instead of Regular

  • I halved the oil and replaced with unsweetened applesauce

Additions:

  • I added 1/4 cup coconut cream to add moisture

The Process

This recipe was very quick and easy to follow being one bowl only. With this being a 10 minute prep and prepare time while the rest is in the oven and the recipe is very clear in the instructions.

The nice thing about the recipe is the only equipment that is needed is measuring spoons, cups, bow, spoon, and pan for the oven.

The recipe can be made and eaten in under an hour which is amazing for a quick breakfast that can bake while you get ready for work or whatever. I personally have made it twice and had it three different times even experimenting with different combinations all to turn out a delicious result.

Taste & Texture

I would expect this type of oatmeal in a restaurant such as Cracker Barrel. The texture is between a muffin and a bowl of oatmeal with a nice crunch from the pecans. What tops this off is the cold creamy yogurt and fresh maple syrup on top.

These ingredients are something you can easily find in your local grocery store especially during autumn, not only is it a healthy recipe but also affordable. Assuming you have salt, baking powder and a few other staples in your pantry at home this recipe will cost approximately $1.25 per serving. Although, it could be less depending on brands and locations of where the food is purchased. If cost is an issue in this recipe substituting oil for applesauce and adding coconut cream may not be something you would want to do.

This recipe does not leave any room for waste with the pumpkin as the whole can is used and for my family of four this served us for about one meal with some to spare.

What can beat a morning with fresh ingredients, and protein rich bowl of oatmeal.
